I'm not sure if it has to do with the install directories I've chosen (those being "steam/steamapps/common/fallout 3 goty" and "common/Fallout New Vegas") but every time the installer gets to "Extracting Meshes.bsa" it Crashes.

That doesn't look like a crash to me, it looks like it is working. It can take a fairly long time especially if you have a slow computer. When it gets to that point, just wait patiently, don't click anything don't try to force quit it, just wait. Give it 30 minutes at least an hour at most, if it still doesn't appear to be doing anything then you have a real problem.

Does the installer just gets
Does the installer just gets unresponsive like in that picture or does it gets an error message and/or closes itself?
The reason I ask is because the installer will get unresponsive, it takes a long time for the installation to be complete, so unless you get a error message or the installer just crash or something I recommend not panic and just wait, like I said it takes a long time 
.
